Warning. This is another blog post about food. And it is a post about food that may not be commonly eaten in the United States so pursue reading at your own risk.
Okay really its not that bad. I just have to share with the world that I ate rabbit for dinner and I liked it. Honestly. I think I have found a solution to my fathers problems of the little buggers eating through the lights on our back porch. Throw them in a crock pot with some peppers and onions and tadamos! Dinner.
It started out with a yummy yummy pasta course of curly noodles in olive oil and broccoli. I'm just going to throw it out there that I kind of want to come back a noodle snob but so far I'm failing at that because I can't remember the Italian name for spiral pasta. Also Carmen probably thinks that Christian and I are nuts because of how excited we got over the broccoli. We both LOVE broccoli. So that dish was another success. Then she brought out the rabbit. I missed what she said at first because she was talking more to Christian because Christian had mentioned to her once that she liked rabbit. So the next thing I know is Christian is getting excited and Carmen is looking at me kind of sheepishly saying the actual English word rabbit and my jaw just drops. I couldn't believe it. And then I got really excited to try it. Not only did it smell heavenly, but I was totally going to be in touch with my Laura Ingalls Wilder side because she too ate rabbit.
Needless to say it was delicious. I don't think it was cooked in a crockpot, however I feel as though it could easily be duplicated there. Through in some onions, green peppers, some seasoning, and some water to steam it all and presto. Rabbit for dinner. It was really tender and I'm here to tell you. It tastes like chicken.
We also had an arugula and tomato salad with balsamic vinegar and olive oil for salad dressing and Carmen thought I was clever to sprinkle the Parmesan cheese on it too. Along with some chewy, crusty bread, and some red wine, it was ANOTHER fantastic dinner. Espeically when we polished it off with some fresh pineapple, peaches and caramel. Trust me. Dip the fruit in the caramel. Great life choice.
I guess the moral of the story here is, if they say it tastes like chicken, give it a whirl!
